Simonnet-Febvre

The Simonnet-Febvre winery has been founded in 1840, in Chablis, with a mission to exclusively produce sparkling wines using the traditional method. Nowadays Simonnet-Febvre makes elegant wines that stand out due to a fine structure, a good balance and a long finish. Furthermore, it is currently the only producer of Cremant wines in Chablis region. However the winery's pride is the Chablis Grand Cru Les Clos, a wine of consistent quality.
Since 2003 the company has been owned by Louis Latour, who had always aspired to acquire vineyards in Chablis and become one of the leading producers in the region. Under Louis Latour, the company produces three types of wine: Cremants, and wines from Yonne and Chablis grapes (including harvests from Premier Cru and Grand Cru vineyards). Yonne is a variety that was destroyed by the phylloxera crisis having hit the area in the 19th century. The variety has now been progressively replanted and regained its prestige.
With four hectares of vineyards in Chablis, the company produces a wide range of magnificent wines expressing the different terroirs of the Chablis and Grand Auxerrois vineyards, the best of Burgundy: Petit Chablis, Chablis, Premier Cru, Grand Cru, as well as Bourgogne-Irancy, Coulanges, and other wines made by Simonnet-Febvre. The wine house offers sublime wines in a number of different categories, showcasing the unique qualities of the company's terroirs rich in limestone and grey marl dating back to the Jurassic period. The combination of traditional methods and new winemaking technologies has allowed the company to retain its leading position in international market ratings.
The Simonnet-Febvre wine house is part of the Louis Latour distribution chain, but has kept its independence in winemaking.
